Black garlic is an ancient Chinese delicacy that's made its way into the US culinary world in recent years. It is made from raw garlic that was heated at a low temperature for 30 days, thereby achieving the deepest possible caramelization. The result is soft cloves that are literally black in color, but have a sweet, mellow, complex flavor with notes of molasses and balsamic vinegar. They lack the pungent taste of garlic and do not have a smoky or charred flavor. They can be eaten as-is for a healthy snack, or used as flavoring in your cooking.
